Anglesey EggsThis dish is a happy mixture of two favourite Welsh foods, leek and cheese.

  • 6 medium Leeks, chopped and cleaned
  • 450 grams Potatoes, cooked and mashed
  • 25 grams Butter
  • Salt & Pepper
  • 8 medium Eggs, hard-boiled
  • 300 ml White Sauce
  • 50 grams Cheddar Cheese, grated

  1. Chop leeks into 1 cm slices and cook them in boiling salted water for 10 minutes.
  2. Drain thoroughly and add them to the mashed potatoes, with the butter, salt and pepper to taste.
  3. Beat the leek and potato mixture thoroughly until pale green and fluffy.
  4. Slice the hard-boiled eggs and arrange them in the centre of a large shallow fireproof dish, spoon the potato mixture round them.
  5. Keep the dish warm while making the white sauce, stir in the cheese, keeping 2 tablespoons for the topping.
  6. Pour the cheese sauce over the eggs and sprinkle the 2 tablespoons of grated Cheddar cheese on top.
  7. Bake in the centre of a pre-heated oven at 200˚C, for 20 minutes or until the cheese is golden brown on top.
