Rum TrufflesSuper-tasty, impressive, messy but easy treats. Omit the rum for the teetotallers among you or ramp up the rum to three tablespoons for a good rum flavour.

  • 75 grams Plain Chocolate
  • 1 medium Egg Yolk
  • 13 grams Butter
  • 1 teaspoon Rum
  • 1 teaspoon Single Cream
  • 50 grams Chocolate Vermicelli or Drinking Chocolate

  1. Melt the chocolate in a small bowl over a pan of hot water.
  2. Add the egg yolk, butter, rum and cream.
  3. Beat the mixture until thick, then chill in the fridge until firm enough to handle.
  4. Shape the mixture into 12 balls and toss at once in vermicelli or drinking chocolate.
