  • 225 grams Icing Sugar
  • 1 medium Egg White
  • Peppermint Essence

{tab Instructions}

  1. Sift the icing sugar into a bowl and blend with enough beaten egg white to form a stiff paste.
  2. Add a few drops of peppermint essence to taste.
  3. Knead the paste lightly in the bowl, using the fingertips.
  4. Roll the paste out 6 mm thick, between sheets of non-stick or waxed paper.
  5. Stamp out 2.5 cm rounds with a plain cutter, and leave the mint to dry for about 24 hours.
  6. These can be eaten as they are, or cover in dark chocolate, for an even better treat.
