  • 250 grams Chocolate Dots
  • 4 tablespoons Black Coffee, strong
  • 50 grams Butter
  • 2 medium Egg Yolks
  • Rum
  • Hazel Nuts, blanched

{tab Instructions}

  1. Melt 125 grams of the chocolate dots.
  2. Cool slightly, then put a teaspoon of the melted chocolate into a small paper sweet case, press another case over the chocolate to squeeze it up the sides.
  3. Repeat with the remaining chocolate.
  4. Leave overnight.
  5. The next day, peel off the paper cases.
  6. Melt the remaining chocolate dots as before, and stir in the coffee.
  7. When cool, beat in the softened, but not oily, butter and egg yolks, add the rum to taste.
  8. Spoon this mixture into a forcing bag fitted with a large star nozzle and pipe into the chocolate cases.
  9. Top each collette with a hazelnut and leave to set.
