Sweet Potatoes with ApplesSweet potatoes are a staple vegetable in the southern United States. This particular recipe is a popular Creole dish which can be served on its own as a vegetable casserole, or with roast lamb.

  • 450 grams Sweet Potatoes
  • 600 grams Cooking Apples
  • 75 grams Butter
  • 1 teaspoon Salt
  • 175 grams Soft Brown Sugar
  • 1 teaspoon Nutmeg, grated
  • 1 tablespoon Lemon Juice

  1. Peel and thinly slice the sweet potatoes, peel, core and thinly slice the apples.
  2. Butter a casserole dish, and in it arrange alternate layers of sweet potatoes and apples, starting and finishing with sweet potatoes.
  3. Sprinkle each layer with salt, sugar, nutmeg and lemon juice, and dot with remaining butter.
  4. Set the casserole on the lowest shelf of an oven pre-heated to 200°C and cook for 40 minutes or until the potatoes are tender.
  5. Serve straight from the casserole.
