Green Beans Tuscany StyleThis spicy Italian method of cooking beans is a useful way of ringing the changes on runner beans towards the end of their season. French beans may also be cooked by this means, and both go well with roast or grilled meat and poultry.

  • 450 grams Runner Beans
  • 50 grams Butter
  • 1 tablespoon Olive Oil
  • 1 dessertspoon Sage, chopped
  • 1 clove Garlic
  • Salt & Black Pepper
  • 1 tablespoon Parmesan Cheese, grated

  1. Wash, top, tail and string the runner beans.
  2. Cut them into 5 cm chunks, not finely sliced as in the English style.
  3. Cook the beans in boiling salted water over low heat until just tender.
  4. Drain the beans thoroughly and cover them with a cloth to keep warm.
  5. Heat the butter and oil over moderate heat, stir in half the sage and crushed garlic.
  6. Fry for 1 minute, then add the beans.
  7. Season to taste with salt and pepper and stir over low heat for 5 minutes.
  8. Mix in the Parmesan cheese, and serve the beans at once, sprinkled with herbs.
