Chipped PotatoesThese potatoes have a really nice texture! I could see adding garlic or more onion if you want.

  • 4 Potatoes, thinly sliced
  • 1 tablespoon Butter
  • 1 tablespoon Onion, minced
  • 1 teaspoon Salt
  • ⅛ teaspoon Pepper
  • 1 tablespoon Parsley, chopped
  • ½ teaspoon Thyme, chopped
  • 100 grams Cheddar Cheese, grated

  1. Preheat oven to 210˚C.
  2. Layer potato slices in 30 x 22 x 5 cm baking dish lightly sprayed with oil.
  3. Melt butter in small saucepan and stir in grated onion, salt and pepper.
  4. Pour over potatoes and bake for about 40 minutes or until tender when pierced with fork.
  5. Sprinkle with parsley, thyme and cheese and bake for an additional 10 minutes or until cheese is melted.
