Waldorf SaladThis American salad was created at the Waldorf-Astoria Hotel in New York. The tart combination of apple and celery makes it an excellent counter-balance to rich meats such as duck and pork.

  • 450 grams Red Apples, dessert
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Caster Sugar
  • 150 ml Mayonnaise
  • ½ head Celery
  • 50 grams Walnuts, shelled
  • 1 medium Lettuce

{tab Instructions}

  1. Wash and core the apples, slice one apple finely and dice the remainder.
  2. Dip the apple slices in a dressing of lemon juice, caster sugar and 1 tablespoon of the mayonnaise.
  3. Set aside.
  4. Toss the diced apple in the dressing and let it stand for 30 minutes.
  5. Scrub and chop the celery and chop the walnuts.
  6. Add the celery and walnuts to the diced apple, with the rest of the mayonnaise, and mix thoroughly.
  7. Line a serving bowl with the cleaned and chilled lettuce leaves, pile the salad into the centre and garnish with the apple slices.
