Pineapple in KirschThe Kirsch, and the ample sprinkling of icing sugar, transform already delicious pineapple into a heady mouthful.

  • 1 small Pineapple
  • 2 large Oranges
  • 8 Maraschino Cherries
  • 2 tablespoons Caster Sugar
  • 2 tablespoons Kirsch

{tab Instructions}

  1. Cut the pineapple into eight rounds, slice off the skin and remove woody eyes and centre cores.
  2. Slice the peel and white pith from the oranges, and cut each orange into eight slices, crossways.
  3. Arrange one slice of pineapple and two of orange on individual dessert plates and top with a cherry.
  4. Dissolve the sugar in 2 tablespoons of water in a small pan over gentle heat, add the Kirsch and spoon the syrup over the pineapple.
  5. Chill and serve with a jug of chilled cream.
