Lemon SouffléThere are tons of desserts out there best enjoyed in spring time, but for our money, nothings better than a light and airy soufflé— especially. a lemon one!

  • 2 medium Lemons
  • 3 medium Eggs
  • 75 grams Caster Sugar
  • 2 teaspoons Gelatine
  • 150 ml Double Cream

{tab Instructions}

  1. Grate the rind from the lemons and squeeze out the juice.
  2. Separate the eggs, and beat the egg yolks, sugar, lemon rind and juice in a bowl until thick.
  3. In a small bowl, mix the gelatine with 2 tablespoons of cold water and set the bowl in a pan of hot water until the gelatine has dissolved and is clear.
  4. Allow the gelatine to cool slightly, then pour it into the lemon mixture.
  5. Beat the cream, until it holds its shape, then fold it into the lemon mixture.
  6. Whisk the egg whites until stiff and fold them carefully into the mixture when nearly set.
  7. Spoon the lemon soufflé into prepared soufflé dishes and chill until set.
