Baked ApplesThis is an absolutely classic dessert - it's so simple, and a great way to use up cooking apples. Kids and adults alike love this pudding.

  • 4 large Cooking Apples
  • 63 grams Soft Brown Sugar
  • 63 grams Butter
  • 1 medium Lemon, grated and juiced
  • 125 grams Glacé Cherries
  • 1 tablespoon Brandy

  1. Wipe the apples and remove the cores, using a sharp knife or apple corer.
  2. Make a cut in the skin around the middle of each apple.
  3. Place the apples in an oven-proof dish.
  4. Fill the cavity with a little sugar and a small knob of butter.
  5. Bake in the centre of a pre-heated oven at 180˚C for about 30 minutes, basting occasionally with the apple juices.
  6. Meanwhile, grate the lemon rind and squeeze out the juice.
  7. Melt the remaining butter and sugar in a small saucepan.
  8. When the sugar has dissolved, boil gently to a rich caramel colour.
  9. Add the lemon rind and juice, cherries and brandy to the pan, and blend thoroughly, using a wooden spoon to loosen the caramel.
  10. Simmer for 1 - 2 minutes.
  11. Spoon over the baked apples and serve hot, with either ice cream or a jug of cream.
