  • 125 grams Shortcrust Pastry
  • 50 grams Glacé Cherries
  • 25 grams Angelica
  • 50 grams Mixed Peel, chopped
  • 75 grams Butter
  • 75 grams Caster Sugar
  • 2 medium Egg Yolks

  1. Roll out the pastry and use to line a 17.8 cm fluted flan ring.
  2. Chop the cherries and angelica, or snip them with scissors, mix them with the peel and cover the base of the flan case evenly with the fruit.
  3. Put the butter, sugar and eggs yolks in a small pan over low heat, and beat steadily with a wooden spoon.
  4. Bring the mixture to the boil and pour it over the fruit.
  5. Bake the tart in the centre of the pre-heated oven, at 190˚C, for about 40 minutes.
