  • 350 grams Rice, long grain, cooked
  • 2 medium Onions
  • 4 rashers Green Bacon
  • 4 medium Eggs
  • 1 teaspoon Salt
  • 3 tablespoons Vegetable Oil
  • 125 grams Green Peas
  • 50 grams Butter, unsalted
  • Soy Sauce, to taste

  1. Peel and thinly slice the onions.
  2. Remove rind and gristle and cut the bacon into narrow strips crossways.
  3. Beat the eggs lightly with the salt.
  4. Cook the peas in butter for 3 minutes over low heat.
  5. Heat the oil in a large frying pan and stir-fry the onions and bacon over high heat for 2 minutes.
  6. Add the eggs and reduce the heat.
  7. Tilt the pan until the eggs cover the base, allow them to set, then
  8. scramble them immediately, being careful not to break the scrambles eggs into too small pieces.
  9. Add the rice, mix it in with the onions, bacon and egg, and finally blend in the peas.
  10. Fried rice should be light and dry, with the egg, bacon and peas showing distinctly.
