Turkey or Chicken ToastsThis quick recipe solves the problem of what to do with Christmas leftovers from turkey, and cooked vegetables such as cauliflower, carrots, beans or broccoli.

  • 8 slices Turkey or Chicken, skinned and thin cut
  • 150 ml White Sauce, thick
  • Salt & Black Pepper
  • Tarragon, dried
  • 4 slices Toast, buttered
  • 225 grams Vegetables, cooked and chopped
  • 50 grams Cheddar Cheese, grated

  1. Make the white sauce and season with salt, pepper and tarragon.
  2. Toast the bread, trim off the crusts and spread with butter.
  3. Arrange the turkey on the toast, cover with the vegetables and spoon over the sauce.
  4. Sprinkle the toasts with the cheese and brown under a hot grill until the cheese has melted and is golden brown on top.
  5. Serve at once.
