Mediterranean WrapThis wrap is stuffed with chicken tenders and couscous with a hit of lemon and a healthy dose of fresh herbs.

  • ½ cup Water
  • 70 grams Couscous
  • 2 tablespoons Parsley, chopped
  • 2 tablespoons Mint, chopped
  • ¼ cup Lemon Juice
  • 3 tablespoons Olive Oil
  • 1 clove Garlic, minced
  • ¼ teaspoon Salt, divided
  • ¼ teaspoon Pepper, freshly ground
  • 450 grams Chicken Breasts, finely sliced
  • 1 medium Tomato, chopped
  • 1 medium Cucumber, chopped
  • 4 Tortillas

  1. Bring water to a boil in a small saucepan.
  2. Stir in couscous and remove from the heat.
  3. Cover and let stand for 5 minutes.
  4. Fluff with a fork.
  5. Set aside.
  6. Meanwhile, combine parsley, mint, lemon juice, oil, garlic, ⅛ teaspoon salt and pepper in a small bowl.
  7. Toss chicken tenders in a medium bowl with 1 tablespoon of the parsley mixture and the remaining ⅛ teaspoon salt.
  8. Place the tenders in a large non-stick skillet and cook over medium heat until cooked though, 3 to 5 minutes per side.
  9. Transfer to a clean cutting board.
  10. Cut into bite-size pieces when cool enough to handle.
  11. Stir the remaining parsley mixture into the couscous along with tomato and cucumber.
  12. To assemble wraps, spread about ¼ of the couscous mixture onto each wrap.
  13. Divide the chicken among the wraps.
  14. Roll the wraps up like a burrito, tucking in the sides to hold the ingredients in.
  15. Serve cut in half.
