Devilled KidneysThis dish has been popular in Britain since the 18th century, when the thrifty house-wife invented a spicy sauce to add sparkle to jaded palates.

  • 8 Lamb Kidneys, clean and halved
  • 2 teaspoons Worcestershire Sauce
  • 2 teaspoons Mushroom Ketchup
  • 1 tablespoon Mustard, dry
  • 50 grams Butter, melted
  • Salt & White Pepper
  • Pinch of Cayenne

  1. Heat 2 tablespoons of butter or oil in a pan and fry the kidneys for 3 minutes on each side.
  2. Arrange them in a flame-proof serving dish,.
  3. Mix rest of the ingredients together.
  4. Spread the sauce evenly on top of the kidneys and put under a hot grill for 1 minute.
