Boeuf StroganoffBeef Stroganoff or Beef Stroganov is a Russian dish of sautéed pieces of beef served in a sauce with smetana. From its origins in mid-19th-century Russia, it has become popular around the world, with considerable variation from the original recipe.

  • 700 grams Rump Steak
  • 1 medium Onion
  • 125 grams Mushrooms
  • 50 grams Butter, unsalted
  • 2 dessertspoons French Mustard
  • 2 dessertspoons Plain Flour
  • 50 ml Soured Cream
  • Salt & Black Pepper
  • Lemon Juice

  1. Wipe and trim the steak.
  2. Beat it flat between two sheets of waxed paper and cut it into narrow short strips.
  3. Peel and finely chop the onion and trim and slice the mushrooms.
  4. Heat 25 grams of the butter and fry the vegetables over low heat until soft and just beginning to colour.
  5. Stir in the mustard and enough flour to absorb the fat.
  6. Continue frying over very low heat for 2 - 3 minutes then carefully blend in the soured cream.
  7. Heat the remaining butter in a clean pan and fry the meat over high heat until brown all over, blend it into the sauce.
  8. Season to taste with salt and pepper and lemon juice.
  9. Serve with noodles or fluffy boiled rice and green beans, baby Brussels sprouts or peas.
