Crab with MushroomsThis combination of mushrooms and crab-meat, frozen or tinned, makes a good main course. The dish can also be served as a starter,and shrimps can be substituted for crab.

  • 225 grams Crab Meat
  • 225 grams Button Mushrooms
  • 2 cloves Garlic
  • ½ medium Lemon, juiced
  • Tabasco Sauce
  • 6 tablespoons Olive Oil
  • ¼ teaspoon Caster Sugar
  • Salt & Black Pepper
  • 150 ml Double Cream

Garnish:

  • 75 grams Black Olives
  • Parsley, chopped

  1. Trim and finely slice the mushrooms into a deep bowl.
  2. Crush the garlic and add to the mushrooms,together with the strained lemon juice, a few drops of
  3. Tabasco and the olive oil.
  4. Season to taste with sugar, salt and pepper.
  5. Blend all the ingredients thoroughly, spoon them into a shallow serving dish, leave to chill for 1 hour.
  6. Just before serving, blend the flaked crab-meat with the cream and stir this mixture into the mushrooms.
  7. Garnish the crab and mushrooms with olives and finely chopped parsley.
  8. Serve with warm crusty bread and butter.
  9. A salad of green peppers, endive and Florence fennel tossed in an Italian dressing would also go well with the crab.
