Fresh haddock and prawns are here combined in a cheese sauce and finished off as a gratin.

Ingredients
- 700 grams Haddock, fillets
- 12 Prawns, peeled
- Seasoned Flour
- 50 grams Butter
- 25 grams Plain Flour
- 300 ml Milk
- 50 grams Cheddar Cheese
- 1 small Onion
- Salt & Cayenne Pepper
- 75 ml Double Cream
Instructions
- Wash the fillets thoroughly and pat them dry on absorbent paper.
- Coat each fillet lightly with seasoned flour.
- Use half the butter to grease a shallow flame-proof dish and arrange the fillets in a single layer in this.
- Melt the remaining butter in a small pan, stir in the flour, cook for a few minutes, then gradually add the milk to make a white sauce.
- Grate the cheese and blend it into the sauce, together with the peeled and finely chopped onion.
- Chop the prawns roughly and stir them into the sauce.
- Season with salt and cayenne pepper, and stir in the cream.
- Pour the sauce over the fish and bake in the centre of an oven pre-heated to 200°C for 30 minutes.
- If by that time the top has not turned brown, put the dish under a hot grill for a few minutes.
- Serve the fillets at once, plain boiled rice or new potatoes and a green vegetable, such as spinach go well with this dish.
