  • 50 grams Unsalted Butter
  • 50 grams Icing Sugar
  • Vanilla Essence
  • 2 tablespoons Water, boiling
  • 2 tablespoons Milk

{tab Instructions} 

  1. Beat butter with sieved sugar until light and creamy, gradually adding the boiling water and then the cold milk, a few drop at a time.
  2. Add essence.
  3. This mock cream is suitable for filling éclairs or to supplement a jam in sponge cakes.
