{tab Ingredients} 

  • 12 grams Cornflour
  • 150 ml Milk
  • 1 medium Egg Yolk
  • ½ teaspoon Vanilla Essence
  • 25 grams Caster Sugar

{tab Instructions} 

  1. Blend cornflour with a little cold milk.
  2. Heat the remainder and when almost boiling pour over the blended cornflour, and stir well.
  3. Return mixture to saucepan and cook until leaves the sides of the pan.
  4. Cool slightly, add egg yolk, stir and cook gently.
  5. Then remove from heat and stir in flavouring and sugar.
  6. Cover mixture with a piece of wet greaseproof paper and cool.
  7. Can be used to fill éclairs.
