ButterIcingButter-cream is a type of icing or filling used inside cakes, as a coating, and as decoration. In its simplest form, it is made by creaming butter with powdered sugar, although other fats can be used, such as margarine or lard.

  • 50 grams Unsalted Butter
  • 125 grams Icing Sugar
  • Vanilla Essence


  • 50 grams Walnuts and Glacé Cherries, chopped (optional)
  • 50 grams Crystallised Ginger, chopped (optional)
  • 50 grams Plain Chocolate, grated and melted (optional)
  • Omit vanilla essence and add
  • 1 teaspoon Rum, and (optional)
  • 1 tablespoon Walnuts, chopped (optional)
  • 50 grams Crystallised Pineapple, chopped (optional)
  • 1 teaspoon Instant Coffee (optional)
  • 1 medium Orange Rind, grated (optional) or any other thing you like

  1. Sieve icing sugar, and beat together with the butter.
  2. Add vanilla, or any of the listed variations.
  3. Sufficient for the centre filling of 17.8 - 22.8 cm cake.
