  • 75 grams Plain Flour
  • ½ teaspoon Bicarbonate of Soda
  • 75 grams Demerara Sugar
  • 75 grams Porridge Oats, rolled
  • 75 grams Butter, unsalted
  • 1 tablespoon Rum
  • 1 tablespoon Golden Syrup

  1. Sift the flour and bicarbonate of soda into a bowl, add the sugar and the oats, blending thoroughly.
  2. Heat the butter with the syrup and the rum in a small pan until the butter has just melted.
  3. Pour into the flour mixture and blend thoroughly with a wooden spoon.
  4. Shape the dough into balls, 2.5 cm wide, between floured hands.
  5. Set the balls well apart on greased baking trays.
  6. Bake in the centre of the oven, pre-heated to 160°C, for 20 - 25 minutes or until golden brown.
  7. Serve when cool with Wassail Cup.
