FlaounaA traditional Cypriot Flaouna recipe (Flaounes), for you to prepare this delicious Cypriot sweet & savoury desert to perfection! Flaounes are usually prepared over the Easter holidays with the whole preparation routine being a large family affair but as I absolutely love the texture and delicate flavours of this little treat.

  • 500 grams Plain Flour
  • 2 medium Eggs
  • 1 teaspoon Baking Powder
  • 1 teaspoon Mahlab, ground to a fine powder
  • 1 teaspoon Mastic, ground to a fine powder
  • 1 teaspoon Sugar
  • 125 grams Butter, melted
  • 8 grams Yeast, instant
  • Salt, a pinch of
  • 80 ml Milk for kneading, warm
  • 60 ml Water, warm

Flaounes Filling & Glazing:

  • 500 grams Flaounas Cheese, alternatively 250 grams haloumi and 250 grams mild cheddar
  • 45 grams Semolina
  • 2 medium Eggs
  • 1 teaspoon Baking Powder
  • 1 teaspoon Mahlab
  • 1 teaspoon Mastic
  • 1 teaspoon Mint, chopped
  • 120 grams Raisins
  • 1 medium Egg, whisked
  • 75 grams Sesame Seeds, for the glazing
